Kitchari

Ingredients

1 cup basmati rice

1/2 cup split yellow mung dal

1 tablespoon ghee

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1 teaspoon turmeric powder

1 teaspoon ginger, grated

4 cups water

Salt to taste

Fresh cilantro for garnish

Preparation

  • Rinse rice and mung dal thoroughly.

  • In a large pot, heat ghee and add cumin seeds and mustard seeds.

  • Add turmeric and ginger, sauté for a minute.

  • Add rice and mung dal, sauté for another couple of minutes.

  • Add water and salt, bring to a boil, then simmer until rice and dal are soft.

  • Garnish with fresh cilantro before serving.
